Results from this qualitative study will inform a collaborative and culturally relevant intervention that aims to increase access to fiber-rich foods and improve nutrition knowledge and skills in pre-diabetic SNAP-eligible NH Hispanics.<\/p>\n<strong>Fiber-rich foods, weight status, and the gut microbiota: A comparative study in NH Hispanic adults at risk for food insecurity<br \/>\n<\/strong><em>October 2021 &#8211;<br \/>\n<\/em>Funding source: NH Agricultural Experiment Station (NHAES) Hatch Project<br \/>\nDescription: This project is also referred to as the Fiber and Food Insecurity Research Study, or &#8220;<strong>FIRST<\/strong>&#8220;. The objective of this project is to quantify the relationship between access to fiber-rich foods, fiber intake, and components of the gut microbiota-gut-brain axis in NH Hispanic adults in households eligible for the Supplemental Nutrition Assistance Program (SNAP).
