Focus Groups on Multi-Level, Cross-Sector, Culturally Relevant Interventions for Fiber-Rich Food Consumption in NH Hispanics

Description: The Nutrition Access Focus Groups will engage diverse stakeholders from the food access, public health, community-based/ nonprofit, and community nutrition sectors in Hillsborough County, NH. Results from this qualitative study will inform a collaborative and culturally relevant intervention that aims to increase access to fiber-rich foods and improve nutrition knowledge and skills in pre-diabetic SNAP-eligible NH Hispanics.

Fiber-rich foods, weight status, and the gut microbiota: A comparative study in NH Hispanic adults at risk for food insecurity

Description: This project is also referred to as the Fiber and Food Insecurity Research Study, or "FIRST". The objective of this project is to quantify the relationship between access to fiber-rich foods, fiber intake, and components of the gut microbiota-gut-brain axis in NH Hispanic adults in households eligible for the Supplemental Nutrition Assistance Program (SNAP). This study is being conducted in collaboration with UNH Cooperative Extension (extension.unh.edu) and the Hubbard Center for Genome Studies (hgcs.unh.edu).
